• Treats: Tart Lemon Squares With Walnut Crust

    • 1 c. All-purpose flour
    • 1/4 c. Icing sugar
    •     pn Salt
    • 1/2 c. Unsalted butter
    • 1/3 c. Walnuts, finely minced
    • 2 x Large eggs
    • 3/4 c. Granulated sugar
    • 1 Tbsp. Lemon rind, finely grated
    • 1/4 c. Lemon juice
    • 2 Tbsp. All-purpose flour
    • 1/2 tsp Baking pwdr
    • 1 tsp Icing sugar


    1. In food processor or possibly bowl, blend together flour, icing sugar and salt. Add in butter; pulse or possibly cut-in with pastry blender [or possibly 2 knifes] till fine crumbs form. Stir in walnuts. Gently press handfuls of dough together; pat into lightly greased 8-inch square cake pan. Bake in 350F 180C oven for 20-25 min or possibly till golden brown. Let cold slightly on rack.
    2. Topping:Meanwhile, in bowl, beat Large eggs with sugar till pale and thickened; beat in lemon rind and juice, flour and baking pwdr. Pour over base; Bake for 25-30 min longer or possibly till set in centre and golden. Let cold completely on rack. Dust with icing sugar. Cut into squares.
    3. [Squares can be covered and refrigerated for up to 4 days.]
