Pumpkin is a fruit that is often associated with Thanksgiving and marks the onset of winter months. Some people consider pumpkin to be boring! However, the boring pumpkin when combined with the bread to make a delicious bread pudding makes the perfect combination. Given below is a pumpkin bread pudding recipe with delicious caramel sauce for the cold winter evenings.

    Ingredients

    • For the bread pudding, the required items are:
    • 2 tablespoons of unsalted butter
    • 8 cups of bread (cut in cubes). You can use any kind of bread you like and even pumpkin bread if you like an extra kick of pumpkin
    • 2 cups of heavy cream
    • 1 cup of whole milk
    • 2 teaspoons of vanilla essence
    • 6 yolks of large eggs
    • ½ cup of white sugar
    • 3 tablespoons of pure maple syrup
    • 1 cup of canned pumpkin puree
    • Fresh whipped cream for serving with the pudding
    • For the caramel sauce, the required items are:
    • 1 ¼ cups of dark brown sugar
    • ½ cup of unsalted butter
    • ½ cup of whipped cream
    • ½ teaspoon of ground cinnamon
    • ¼ teaspoon of grated nutmeg

    Directions

    1. To make the bread pudding:
    2. - Grease a 10-inch glass baking dish and preheat the oven to 350F.
    3. - Roast the bread cubes for about 15 minutes in the hot oven until they are slightly crispy.
    4. - In a saucepan, mix the cream, milk and vanilla essence and heat this mixture on medium heat until it simmers.
    5. - In a separate bowl, mix the pumpkin puree with the egg yolks and whisk them using an electric mixer on a low to medium speed.
    6. - Add the sugar and maple syrup to the mix and whisk until the sugar starts to dissolve.
    7. - Now add the hot cream mixture and whisk well to get a smooth custard.
    8. - Line the toasted bread at the bottom of the baking dish and pour the custard over the bread cubes.
    9. - Press the cubes lightly so that they are completely soaked in the liquid.
    10. - Let the dish stand for a few minutes.
    11. - Bake in the preheated oven for about 50 minutes to 1 hour. After 30 minutes of baking time, cover the dish with silver foil.
    12. To make the caramel sauce:
    13. - Simmer the butter and sugar in a saucepan over low heat.
    14. - Add the cinnamon and nutmeg and stir well.
    15. - Now add the cream and whisk the mix until you get a smooth sauce.
    16. Serving suggestion:
    17. Take a portion of pudding on a plate and pour some of the sauce over it. Add a dollop of whipped cream and serve warm.
    18. You can also serve the sauce and cream in small bowls on the side of the pudding.
