Ingredients

  • 2 cups instant espresso or very strong coffee
  • 2 cups Kahlua or Tia Maria
  • 4 dz eggs, fresh, at room temperature, separated
  • 1/2 cup vanilla
  • 6 1/2 cups mascarpone cheese
  • 150 each lady fingers
  • 6 bags whipped cream
  • 1 lb cocoa

Directions

  1. In a bowl, mix the coffee and kahlua and set aside.
  2. Beat the egg whites until stiff and set aside.
  3. In another bowl beat the egg yolks and vanilla until pale and lemon-colored. Add the mascarpone until smooth.
  4. Fold the egg whites into the cheese mixture gently.
  5. In a half-pan or a full hotel pan layer the bottom of the pan with ladyfingers and generously sprinkle the kahlua coffee mixture. Drop 2 cups for half pan and 4 cus for full pans of cheese mixture on top of ladyfingers, repeat with the ladyfingers again followed by the Kahlua-coffee mixture. Top with the chesse mixture.
  6. Refrigerate for at least 3 hours or overnight.
  7. Before serving top with fresh whipped cream and dush with cocoa, or sprinkle chocolate shavings on top.
