    Tortillas with Grilled chicken garden salad and lime juice

    Made this as a snack for my family and it was a big hit.

    Ingredients

    • Tortilla:
    • 2 1/2 cup all-purpose flour
    • 1/8 tsp baking powder
    • salt
    • 1 cup hot water
    • vegetable shortening or 1 tbsp vegetable oil
    • Simple Garden Salad:
    • lettuce
    • red & green bell peppers (cut into strips)
    • Olives
    • tomatoes (cut in quarters)
    • Onions
    • Carrots (sliced into strips)
    • Cheddar cheese (grated)
    • Grilled chicken (used the chicken breast. Don't forget to remove the skin. )
    • Dressing:
    • Mayonnaise
    • Tomato ketchup
    • ground pepper
    • ground garlic
    • salt
    • lime juice

    Directions

    1. Making the Tortillas:
    2. Mix shifted all-purpose flour, baking powder, salt, vegetable shortening or vegetable oil.
    3. Add hot water (you can add more hot water until the desired dough texture is attained) then mix
    4. Let it sit for 15 minutes (cover dough with dry towel)
    5. Separate dough, making it into balls (let it sit for 15 minutes covered with dry towel)
    6. Using a flat surface, flattened tortilla dough using a rolling pin until round shaped. (Make sure it's not to thin to cause the dough to break)
    7. Using a none- stick pan or grill pan, place tortilla dough and let it cook until some parts of the dough are roasty brown. Do it in both sides. ( usually the dough tends to bubble)
    8. Fill in tortilla with garden salad, then roll it. (You can use toothpicks to hold the tortilla)
    9. 8. VOILA!! serve & enjoy:)
