Tortilla Soup

Delicious. You can substitute the tortillas for tortilla chips for an extra crunch.

Ingredients

  • 1 med. onion, minced
  • 1 jalapeno pepper, minced
  • 2 cloves garlic, minced
  • 2 tbsp. vegetable oil
  • 2 pound stew meat
  • 2 (14 1/2 ounce.) cans tomatoes
  • 1 (10 1/2 ounce.) can beef broth
  • 1 (10 1/2 ounce.) can chicken broth
  • 1 (10 1/2 ounce.) can tomato soup
  • 3/4 c. water
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon lemon pepper
  • 2 teaspoon Worcestershire
  • 4 corn tortillas, sliced
  • Shredded Cheddar cheese

Directions

  1. Add vegetable oil to a large pot and heat over medium heat.
  2. Add in the onion, jalapeno, garlic stew meat.
  3. Stir until tender and the meat is just cooked through.
  4. Add in the remaining ingredients and simmer for 1 hour.
  5. Add in tortillas last 10 min.
  6. Garnish with Cheddar cheese.
