Directions
- 1 medium eggplant, sliced ¼âthick
- Salt shaker
- 1 large onion, diced
- 3 tablespoons olive oil
- 2 lbs chicken Italian sausage, sliced ¾âthick
- 2 19oz bags frozen cheese tortellini, cooked
- 1 16 oz jar roasted red peppers, drained
- 1 lb mozzarella cut into ½â cubes
- 1 24 oz can spaghetti sauce
- 2/3 cup Parmesan cheese
