Tomato Vodka Sauce Recipe

- In a medium saucepan heat olive oil over medium heat. Sauté onion and garlic until tender. Stir in tomatoes, tomato paste, vodka, honey, red pepper flakes, salt and pepper. Use a potato masher to mash this very gently until most of the really thick parts of the tomatoes are smooshed. Bring to a boil and reduce heat. Simmer, uncovered, for 15 minutes. Stir in cream and cheese. Cook and stir until heated through and smooth. Pour over your favorite pasta. This is great with gnocchi.
