Tomato Rice (Nasi Tomato)

- 2 1/4 cup of India Gate Basmati Rice
- 1 Pandan leaf (optional)
- 1 cinnamon stick
- 2 cardamon
- 1 tsp ginger & garlic paste
- 1/2 tomato - sliced
- 1/2 onion - sliced
- 3 tbsp tomato puree
- Salt & sugar to taste
- Ghee/Oil for frying
Directions
- Wash and soak the rice for 30 minutes (helps the rice to expand) and drain water and let it stand for another 20 minutes.
- Heat ghee/oil in wok and add the rest of the ingredients except for the tomato puree, salt and sugar.
- Then add in the rice and mix well with the ingredients and transfer into a rice cooker.
- Mix the tomato puree, salt and sugar into the rice and let it cook.
- Note: Once rice is done, you may find some of the puree scattered here and there; simply mix it throughly with the rice.
