Tomato & Kielbasa & Cantaloupe Cold Salad

- 1 cup Kielbasa
- one tablespoon sweet cream butter
- salt and black pepper
- One ripe tomato (sliced thick/wedges)
- One scallion (cut on the bias)
- 1/2 cup diced fresh cantaloupe
- 1/2 lemon (juice only)
- one tablespoon canola oil
- Garnish with a sprig of rosemary
Directions
- Melt butter in a saute pan, cut Kielbasa in bite size pieces and cook 5-6 minutes. Remove from heat into a bowl to cool
- Once cooled add sliced tomato, scallion, cantaloupe, dressing and toss very gently
- I like to cover and chill 30 minutes before eating
- Garnish with rosemary sprig
