  • Tomato Chipotle Soup With Fresh Peach Salsa

    Ingredients

    • 2 1/2 lb plum tomatoes seeded, minced
    • 1 c. tomato juice - (about)
    • 4 Tbsp. minced onion
    • 3 Tbsp. minced fresh cilantro
    • 2 tsp minced canned chipotle chilies or possibly more to taste
    • 1 x garlic clove chopped
    •     Salt to taste
    •     Freshly-grnd black pepper to taste
    • 1 x ripe peach peeled, pitted,
    •     and diced
    • 1 tsp chopped jalapeno chili

    Directions

    1. Reserve 1 c. minced tomatoes for peach salsa. Place remaining tomatoes in processor and puree till smooth. Transfer to 2-qt glass measuring c.. Add in sufficient tomato juice to puree to equal 5 c. tomato mix.
    2. Place 2 c. tomato mix in blender. Add in 2 Tbsp. onion, 2 Tbsp. cilantro, 2 tsp. chipotle chilies and garlic to blender. Puree till very smooth.
    3. Stir puree back into tomato mix in measuring c.. Season to taste with salt and pepper. Add in more minced chipotles, if you like. Cover; chill till well chilled, about 1 hour. (Can be made 1 day ahead. Keep soup chilled. Cover reserved minced tomatoes and chill.)
    4. Mix reserved minced tomatoes, remaining 2 Tbsp. onion and 1 Tbsp. cilantro, peach and jalapeno in small bowl. Ladle tomato soup into bowls. Sprinkle with peach salsa; serve.
    5. This recipe yields 4 servings.
    6. Comments: Chipotle chilies canned in a spicy tomato sauce, sometimes called adobo, are available at Latin American markets, specialty foods stores and some supermarkets.
