Tomato Basil Soup

I often use minced, canned tomatoes. Is wonderful served cold.

Ingredients

  • 3 tbsp. butter
  • 1 lg. carrot, peeled & grated
  • 4 lg. ripe tomatoes, peeled, seeded & minced
  • 1/2 c. slightly packed minced fresh basil
  • 1 lg. onion, sliced
  • 3/4 teaspoon sugar
  • 1/8 teaspoon grnd white pepper
  • 1 3/4 c. chicken broth

Directions

  1. In 3 qt saucepan, heat butter over medium heat.
  2. Add in onion and carrot and cook until onion is transparent, stirring frequently.
  3. Stir in tomatoes, basil, sugar and pepper.
  4. Heat to boiling, stirring constantly.
  5. Reduce heat and simmer, covered for 10 min. Cool slightly.
  6. Pour into food processor or blender and puree till smooth.
  7. Return to pan and stir in broth and salt. Heat till steaming.
  8. Ladle into individual bowls and float 1 thin lemon slice with a basil leaf in each bowl.
