    It’s already May and summer is here in Florida. The days are warm, sunny and just beautiful! We’ve been spending weekends at the beach, on the river and out by the pool soaking up the rays. And after a long day of summer fun, it’s time to fire up the grill and cook up our favorite foods.

    My favorite produce in summer is sweet Florida corn. They have a ton of great recipes for sweet corn, as well as other in season produce right now on the Fresh From Florida Recipe Page. Browsing the recipes this afternoon, it was hard to make a decision from all the delicious recipes!

    But simple is always best so I opted for this Tomato and Parmesan Florida Sweet Corn Recipe. It’s simple, easy to make and makes a great side for any summer dish. Then sweet basil and ripe tomatoes pair perfectly with the sweet corn, and adding the delicious Parmesan makes it just perfect!

    Eating fresh and local is so important for my family. The biggest benefit, for me, is that I save a ton of money. In season local produce in Florida is always cheaper and more plentiful. The nutritional value is also optimized because it doesn’t travel over long distances.

    Eating local and fresh os so easy in Florida too because our growing season is year round. You can always find local produce at your local grocery store that’s in season and super fresh. I found this delicious sweet corn, fresh tomatoes and basil at my local Publix.

    To make this recipe I just start by firing up the grill and grilling some sweet Florida corn. You’ll also need a fresh tomato, fresh basil and some Parmesan.

    Then I brush on some melted butter, because really, I just can’t resist! This is optional though, the original recipe doesn’t call for butter 🙂

    Then I grate on some delicious Parmasan!

    Add some diced tomatoes

    And then the fresh basil.

    Yummy!

    Tomato and Parmesan Florida Sweet Corn

    Ingredients:

    4 ears fresh Florida corn

    2 Florida tomatoes, diced

    Parmesan

    Basil

    Directions:

    Place shucked corn directly on a hot grill.

    Rotate and cook corn until charred and cooked, about 10 minutes.

    Remove from heat.

    Let cool for 5 minutes and add diced tomatoes, Parmesan and basil.

    Portions of toppings based on preference.
