Tofu Chocolate cake with peanut butter frosting

Ingredients

  • 1 3/4 cup flour
  • 3/4 cups pure unsweetened cocoa powder
  • 1 1/2 t. baking powder
  • 1 1/2 t. baking soda
  • 1/4 t. salt
  • 1 13 ounce box soft tofu
  • 1 1/4 cup sugar free maple syrup
  • 3 T. canola oil
  • 1 cup skim milk
  • 1/3 cup boiling water
  • frosting:
  • 2 cups of powdered sugar
  • 3/4 cup of peanut butter
  • 1/4 cup unsalted butter
  • 1/4 cup skim milk
  • 1 t. vanilla

Directions

  1. sift and combine flour, cocoa powder, baking powder and soda, and salt
  2. process tofu in a food processor
  3. then add oil and syrup and process
  4. add the tofu combination to the dry ingredients until combine
  5. add the boiling water until just combined
  6. pour evenly into the two cake pans and bake for 30 minutes or until the knife comes out clean
  7. cool for 20 mins in pans on wire rack
  8. then cool out of pan on wire rack till completely cool
  9. frosting:
  10. add all ingredients together with an electric mixer
  11. frost how desired
