Toasty Waffle

- 8 oz granulated sugar
- 8 oz melted unsalted butter
- 4 eggs, separated
- 8 oz all purpose flour
- 1 ½ teaspoon baking powder
- ½ teaspoon sea salt
Directions
- In a mixing bowl, cream sugar and melted butter until light and fluffy (should almost double in volume) on high. then, on low, add the yolks, one at a time fully incorporating each yolk.
- In a medium sized bowl, mix flour, baking powder, and salt. add flour mixture, a little at a time to the wet ingredients, mixing slowly.
- In another mixing bowl, beat the 4 egg whites until stiff peaks form. fold the egg whites into the remaining ingredients in two stages. If needed, add more flour 1 tablespoon at a time to stiffen the batter, slightly. Batter should not be runny, it should flow off a spoon slowly.
- Preheat your waffle maker and follow cooking instructions for your make and model.
- Use natural maple syrup, if available. Its worth it.
