Toad in the Hole with Apple and Onion

Think of this as Yorkshire Pudding with Sausage, Apple and Onion. Use a larger baking dish for more people.

Ingredients

  • For each person use:
  • 1/2 cup of all purpose flour
  • 1 pinch Kosher salt
  • Pinch of freshly ground black pepper
  • 1 egg, beaten
  • 1/2 cup milk
  • 2 tsp melted butter
  • 1 tsp oil
  • 1 good quality pork or beef sausage link (in casing)
  • ¼ lg. tart apple cut into chunks
  • ¼ medium onion cut into chunks the same size as the apple and separate the layers

Directions

  1. METHOD
  2. Place the rack as low as possible in the oven and set to 425°F
  3. In a large bowl, whisk together the flour with the salt and a pinch of pepper. Make a well in the center of the flour. Pour in the eggs, milk, and melted butter into the well and whisk into the flour until smooth. Cover and let stand 15-30 minutes.
  4. Coat the bottom and sides of an 8x12, 9x9 casserole dish or cast iron skillet with oil (I use EVOOl).
  5. While the oven is coming to temperature, heat a tablespoon of oil in an oven proof skillet, like cast iron, on medium high. Add the sausages and brown them on at least a couple sides. No need to cook through.
  6. When the sausages have browned, cut them into 2 inch chunks. Combine the sausage, apple and onion (stir to distribute) then pour the batter over the top
  7. Cook for about 20-30 minutes or until the batter is risen and is slightly brown.
  8. Serve at once with a tossed green salad.
