Three Easy Pastry Dessert Fillings for Beginners

These easy prep fillings are for pies, tarts, mini-tarts,
trifles,* etc., and only take a few minutes.

Pastry Cream (Vanilla Curd)
Lemon Curd
Chocolate Ganache

* A trifle is a dessert dish from Britain where things like brownies, pudding, whipped cream, fruits are layed in a glass bowl. I use clear plastic cups. It's a wonderful hot weather dessert.

Ingredients

  • Vanilla:
  • 3 egg yolks
  • 1/4 cup sugar
  • 2 tbs. flour
  • 2 tbs. cornstarch
  • 1 1/4 cups milk
  • Lemon:
  • 1/2 cup fresh lemon juice
  • 4 egg yolks, beaten
  • 1 cup sugar
  • 5 tbs. unsalted butter, melted
  • 1 tbs. lemon zest
  • Ganache:
  • 1/2 cup heavy cream (whipping cream)
  • 2 cups semi-sweet chocolate morsels

Directions

  1. Vanilla:
  2. Combine yols, sugar, flour and cornstarch in a medium saucepot.
  3. Add milk, heat to medium high, stirring constantly.
  4. When the mix boils, turn it to low, and stir for 2 minutes or so until it thickens.
  5. Pour into prepared pastry shell or layer with other trifle ingredients.
  6. Lemon:
  7. Add ingredients to a saucepan, heat on medium high, stirring constantly, until it boils.
  8. Cut heat to low and stir until the mixture thickens - about 2 minutes.
  9. Ganache:
  10. Bring cream to a boil, remove from heat and stir in chocolate.
  11. Mix until blended.
