Ingredients

  • 1 pkt Frzn puff pastry
  • 1/2 c. Diced yellow onion
  • 1 1/2 c. Shredded jack cheese
  • 1/2 c. Shredded cheddar cheese
  • 1 x 10 ounces pa minced spinach thawed
  • 1 c. Heavy cream
  • 3 x Large eggs
  •     Salt and pepper
  • 1/2 c. Minced roasted red peppers
  • 1/2 c. Feta cheese

Directions

  1. Directions: On a lightly floured surface, roll out 1 sheet of thawed frzn puff pastry to 1/4 inch thick. Place in a 9" pie plate and fold the edges under. Prick the pastry with a fork, then bake at 400 degrees for 10-12 min. Let cold. Sprinkle the onion, jack cheese, and cheddar cheese into the baked pastry shell. In a mixing bowl, combine the thawed spinach, cream, Large eggs, salt and pepper. Mix well. Pour the mix over the onion and cheese. Top with the red peppers and feta cheese. Bake uncovered at 350 degrees for about 50 min till set. Let cold slightly and serve.
