The Best Swiss Chard Recipe Ever

A hearty rich greens recipe that my family loves.

Goes Well With: roasted meat, grilled meat

Ingredients

  • 2 or 3 large bunches of Swiss Chard (or your favorite hearty greens)
  • 3 or 4 ounces of slab bacon (regular bacon can be substituted)
  • 1 large onion, peeled, root and top end removed
  • 8 ounces sliced mushrooms
  • 2 tbs worchestershire sauce
  • 1/4 cup 10% cream
  • 2 tbs olive oil
  • 2 tbs butter
  • 2 or 3 ounces of your favorite cheese shredded
  • salt and pepper to taste

Directions

  1. Remove the rind from the bacon and slice into lardons (little chunks)
  2. Rinse the chard well to remove any grit
  3. Slice the onion (pole to pole) into thin slices
  4. Remove the ribs from the chard and dice into bite sized pieces
  5. Slice the leaves into medium sized strips
  6. In a large saute pan or wok heat 2 tbs olive oil
  7. Add the bacon and cook until nearly done
  8. Add the onions and chard stems, sauteing until translucent and tender
  9. Add the mushrooms and worchershire sauce and saute until almost brown
  10. Add the chard leaves and stir in until wilted
  11. Add the butter and cream and shredded cheese (I like romano)
  12. Stir until the butter and cheese have melted and the cream thickens a bit.
  13. Best served warm
