  • Thai Scallops With Green Beans (Hl)

    Ingredients

    • 1/2 lb scallops or possibly use thinly sliced beef pork or possibly chicken
    •     Defatted chicken broth
    • 1 tsp red curry paste to 1 Tbsp.
    • 2 x garlic cloves chopped
    • 1 c. green beans steamed
    • 1/2 x onion julienned
    • 3 x kaffir lime leaves or possibly zest of one lime
    • 1 tsp sugar
    • 1 can evaporated skim lowfat milk (12 oz)
    • 1 tsp coconut extract
    • 1 x red bell pepper julienned
    • 1 tsp cornstarch mixed with 2
    •     tsp. water
    • 10 x basil leaves minced
    • 1 Tbsp. fish sauce
    •     Minced red chili peppers to taste

    Directions

    1. Rinse the scallops. In a large nonstick skillet, heat curry paste and garlic on high till the paste bubbles. Add in green beans, onions, lime leaves, sugar, lowfat milk and coconut extract. Stir well and cook about 5 min. Add in the scallops, red pepper and cornstarch and cook 5 min longer or possibly till scallops are cooked and the sauce has thickened. Stir in the basil leaves, fish sauce and chili peppers. Served with steamed rice.
