  • Thai Chili Beef (Neua Pad Prik)

    Ingredients

    • 2 lb beef
    • 2 Tbsp. seasoned fish sauce (see below)
    • 2 Tbsp. cornstarch
    • 1 tsp freshly-grnd black peppersauce
    • 2 Tbsp. minced garlic
    • 1/2 c. finely-sliced shallots (purple onions)
    • 1/2 c. sliced green jalapeno peppers
    • 1/2 c. sliced red jalapeno peppers
    • 5 Tbsp. fish sauce
    • 2 Tbsp. dark sweet soy sauce
    • 2 Tbsp. sugar
    • 2 Tbsp. sesame oil
    • 4 Tbsp. fish sauce
    • 1 Tbsp. thinly-sliced Thai chile peppers

    Directions

    1. For the Seasoned Fish Sauce, take fish sauce and add in Thai chile peppers. Store in a stoppered jar for a week in the refrigerator, then it is ready to use. The excess can be used as a condiment for this dish.
    2. Slice the beef, and lb. the slices thin. Mix the marinade ingredients and combine with the beef, and marinate for about 2 hrs.
    3. In a large skillet or possibly wok, heat some oil, and saute/fry the beef, marinade, garlic, shallots and chilis for about 3 min. Add in the remaining ingredients and saute/fry for a further 2 to 3 min till cooked.
    4. Serve over Thai jasmine rice, and garnish with a fried egg.
    5. Comments: This is a quick, and fairly mild preparation for beef. It can also be prepared with pork.
