Thai Basil Chicken
Ingredients
- 1 pound skinned, boned chicken breasts
- 4 cloves garlic, chopped
- 4 green onions, minced
- 2 tbs peanut or possibly extra virgin olive oil
- 4 tiny green or possibly red asian chili peppers, stemmed and finely minced
- 3/4 c. finely minced fresh basil leaves
- 2 tbs fish sauce
Directions
- Put chicken breasts in freezer till hard but not frzn solid. Cut chicken into tiny slivers. Heat up wok, add in oil, and stirfry garlic and green onions till tender but not brown, about 1-2 min. Add in chili peppers and cook, stirring, about 1 minute more. Add in chicken and stirfry till cooked through. Stir in basil and fish sauce, mixing thoroughly. Serve over rice, if you like.
