• Texas Pasta Salad Ii

    • 1 pkg. Texas pasta
    • 1 sm. can green chilies, minced
    • 1-2 cans red beans or possibly Mexican flavored red beans, liquid removed
    • 2 c. loose packed cheese, Monterey Jack or possibly cheddar cheese
    • 3-4 minced fresh tomatoes
    • 1-2 minced green peppers
    • 10 slices cooked bacon, crumbled or possibly 1 jar Hormel bacon
    • 1 sm. can sliced ripe olives, liquid removed
    • Green Goddess dressing, or possibly not too thick guacamole


    1. Cook pasta according to directions on package. Drain and cold. Mix the rest of the ingredients together (minus dressing) then toss with dressing. Keeps well. This is also good with lettuce and cubes of avocado tossed in, but naturally will not keep fresh.
