Tex-Mex Cheese Enchiladas

- 1 recipe Red Chile Gravy, or Easy Red Enchilada Sauce (see links)
- 1 tbs. oil
- 1/2 cup chopped onions
- 1 lb. sharp ceddar cheese, shredded, or your favorite cheese
- 1 tsp. taco seasoning or Tex-Mex Diablo Dust
- 8 flour tortillas
- Topping: 1 cup shredded Monterrey Jack or Pepper Jack Cheese
- 3 tbs pico de gallo
Directions
- Make desired sauce.
- Heat oven to 350 F.
- Saute onions in oil, let cool, combine with cheese and taco seasoning.
- Put 1/4 of the red sauce in a baking pan.
- Divide cheddar cheese mix in 8 portions. Roll each portion in a enchilada, place seam side down in pan. Repeat.
- Top enchiladas with the rest of the sauce and Jack cheese.
- Bake 15-20 minutes, uncovered.
- Garnish with pico de gallo, sour cream, salsa, or cilantro.
