Tex-Mex Beef and Cheese Enchiladas

Tex-Mex 101 enchilada recipe made with ground beef.

Only recently are people in Mexico beginning to appreciate Tex-Mex foods, which are essentially south Texas ranch country and Mexican fusion foods.

Ingredients

  • 1 recipe Chile con Carne Sauce
  • 1 lb. Velveeta or American cheese
  • 1 chopped onion
  • 8 oz. cheddar or colby jack cheese, shredded
  • 8 flour tortillas, or 12 corn
  • cojita or feta crumbles, or shredded Monterrey Jack cheese

Directions

  1. Prepare chile sauce.
  2. Heat oven to 350 F.
  3. Cut Velveeta or American cheese in strips.
  4. Pour 1/4 of the sauce in a 9x13 baking pan.
  5. Heat tortillas in a skilliet or the microwave, place cheese strips in each one, roll, place seam side down in pan, not touching.
  6. Pour remainder of sauce on enchiladas, sprinkle shredded cheese on top.
  7. Bake 25 minutes.
  8. Remove from oven, top with onions and cojito or feta, or Jack cheese.
  9. Note: I prefer to griil the onions and include them inside the enchiladas, but many like the onions raw.
