Tempeh and Apple Wraps

Wrap your mouth around our mouth-water wrap and you will enjoy a mouthful of flavor! That in itself was quite a mouthful. But seriously, this is a great way to serve a delicious wrap with a lot of healthy ingredients.

Ingredients

  • 3/4 cup of vegenaise
  • 1 tablespoon of chili powder
  • 1 teaspoon of ground cumin
  • a dash of crushed red pepper flakes
  • a sprinkle of smoked paprika
  • 1/2 package (4 oz.) of 3-grain tempeh, cubed
  • 3 medium carrots, shaved
  • 1/4 of a medium sized red onion, chopped
  • 2 tablespoons of green pumpkin seeds
  • 1/2 package (4 - 6 cups) loose baby spinach
  • 1/2 large red apple, quartered and sliced thin
  • 4 multi-grain tortilla wraps

Directions

  1. Place the tempeh cubes in a small saucepan with a steam basket
  2. and steam-cook for about 10 minutes. Sprinkle first with the
  3. smoked paprika.
  4. Meanwhile, chop the onion and shred the carrots and place them in
  5. a large bowl. Add the apple, pumpkin seeds and spinach and toss to mix.
  6. When the tempeh has cooked, allow it to cool to at least room temp.
  7. As it is cooling mix the vegenaise, chili powder, ground cumin and
  8. red pepper flakes thoroughly.
  9. Add the dressing to the bowl with the spinach mixture and toss to coat.
  10. When the tempeh has cooled add it to the bowl with the spinach mixture
  11. and toss again to incorporate the tempeh.
  12. Lay four multi-grain tortillas on a cutting board. Spoon the mixture
  13. across one edge of the tortilla, to almost the middle.
  14. Fold and tuck the tortilla to form a delicious wrap. Repeat with the
  15. other three tortillas.
  16. Enjoy!
  17. This is just as good when stuffed into a pita half, as well.
