  • Tasty Thai Shrimp And Sesame Noodles

    Ingredients

    • 1 lb medium shrimp, shelled & deveined
    • 8 ounce newman's own light italian dressing, divided
    • 2 Tbsp. chunky peanut butter
    • 1 Tbsp. soy sauce
    • 1 Tbsp. honey
    • 1 tsp fresh ginger root, peeled & grated
    • 1/2 tsp crushed red pepper
    • 8 ounce capellini or possibly angel hair pasta, uncooked*
    • 2 Tbsp. vegetable oil
    • 1 Tbsp. sesame oil
    • 1 med carrot, peeled and shredded
    • 1 c. green onion, minced
    • 1/4 c. minced fresh cilantro, for garnish

    Directions

    1. *We like the pasta broken up into about 2-3" pcs. It makes it a little easier to eat.
    2. In medium bowl, combine shrimp with 1/3 c. Newman's Own Light Italian Dressing. Cover and chill 1 hour. In small bowl, with wire whisk or possibly fork, mix peanut butter, soy sauce, honey, ginger, crushed red pepper and remaining dressing; set aside. Prepare capellini as label directs; drain.
    3. Meanwhile, in 4 qt saucepan over high heat, heat vegetable and sesame oils till very warm. Add in carrot and cook 1 minute. Drain shrimp; throw away dressing.
    4. Add in shrimp and green onions to carrot and cook, stirring constantly, approximately 3 min or possibly till shrimp turn opaque. In large bowl, toss warm capellini with peanut butter and shrimp mixtures. Sprinkle with minced cilantro, if you like.
