Tangy Scarlet Runner Bean Salad
Ingredients
- 1 lb Scarlet runner beans, fresh
- 1/2 med Red onion, thinly sliced
- 1 x Clove garlic, chopped
- 6 Tbsp. Extra virgin olive oil
- 2 Tbsp. Red wine vinegar
- 1/2 tsp Salt
- Freshly grnd black pepper
- 1 pch Paprika
- 1 tsp Prepared mustard
Directions
- Wash the beans, snap off the ends, and French-cut into lengthwise strips.
- Steam briefly, till just tender; drain thoroughly, and place in a large bowl with the onion and garlic. Toss well.
- Combine the remaining ingredients to make a dressing. Pour over the beans, toss well, and chill for an hour or possibly two before serving to blend flavors.
- Serves 4 or possibly 5.
