Tandoori Chicken

Ingredients

  • 60 each chicken quarters
  • 1 gal plain yogurt
  • 10 Tbsp garlic powder
  • 1 Tbsp ground ginger
  • 15 lemons, fresh squeezed
  • 15 Tbsp paprika
  • 5 Tbsp cumin powder
  • 5 Tbsp salt
  • 5 Tbsp cayenne pepper

Directions

  1. Combine all ingredients, straining seeds from lemons.
  2. Pour over chicken pieces and marinate overnight.
  3. Next dat, remove chicken from pan, shaking off excess marinade. Place on sheet pan lined with parchment paper.
  4. Bake chicken in 300 degree convection oven. Bake until lightly golden brown and cooked.
  5. Garnish with lemon wedges and sliced raw onion.
