  • Tamil Naadu Sambhar Masala

    Ingredients

    • 1 1/2 cups coriander seeds
    • 4 tablespoons cumin seeds
    • 1 1/2 tablespoons fenugreek seeds
    • 1 1/2 tablespoons black peppercorns
    • 1 1/2 tablespoons mustard seeds
    • 2 teaspoons poppy seeds ; ground
    • 2 sticks cinnamon
    • 1/2 cup curry leaves
    • 2 teaspoons chana dal rinsed and ; drained
    • 2 teaspoons arhar or toor dal ; rinsed and drained
    • 2 cups red chilies ; dried
    • 2 teaspoons turmeric ground
    • 1 tablespoon vegetable oil

    Directions

    1. Set aside oil, dried red cillies and tumeric.
    2. Dry roast each spice individually over medium heat a few moments until the spices and curry leaves are fragrant and dals are golden.
    3. Add the oil to the pan and heat through then stir fry dried red chilis until fragrant, about 1 minute.
    4. Mix everything together and grind until a fine powder.
    5. Store in a sanitized airtight container.
