  • Taco Cupcakes

    I LOVED these! I can't wait to make them again. I fancied up my refried beans, but if you prefer plain or have a different preferred method use that. You can also substitute turkey or the hamburger or use homemade taco seasoning instead of store bought.

    Ingredients

    • 6 Egg roll wrappers cut into 4 equal squares, or 24 wonton wrappers (I used egg roll wrappers because my store was out of wonton. They were a little small after being trimmed, but worked just fine)
    • 1 lb ground hamburger
    • 1 packet store bought taco seasoning
    • 1 can refried beans (I used vegetarian, low fat, black beans)
    • 1 serrano chili
    • Tortilla chips
    • Cheddar cheese
    • Taco toppings! Like sour cream, tomato, green onion, cilantro, or whatever you like on tacos!

    Directions

    1. In a large skillet, cook the ground hamburger until brown and crumbly and cook through. Drain the fat if needed.
    2. Add in the taco seasoning and amount of water according to the package directions and let simmer for several minutes.
    3. In a small saucepan, heat the refried beans with the whole serrano chili. These little chilis are hot so there is not need to cut them to get the heat and flavor. However if you like spicy, feel free to open it up. The longer you let the beans simmer the more flavor comes out from the chili. I let mine sit about 5-10 minutes on low, stirring regularly.
    4. Lightly spray a muffin tin.
    5. Layer in one egg roll piece, then about a tablespoon of beans.
    6. Top the beans with a crushed tortilla chip.
    7. Then add about a tablespoon of the hamburger and a sprinkle of cheese. Top it with an egg roll piece and repeat the layer.
    8. Each cup should have two layers.
    9. Bake in a 375 degree oven for about 15-18 minutes. Until everything is golden and the cheese is bubbly.
    10. Top with your favorite toppings! Great for parties or game days!
