  • Taco Casserole With Soy Crumbles

    Ingredients

    • 1 pkt frzn soy burger crumbles (12 ounce.)
    • 1 lrg onion minced
    • 1 Tbsp. extra virgin olive oil
    • 2 can enchilada sauce 10-ounce.
    • 15 ounce canned kidney beans
    • 8 ounce baked tortilla chips (1 bag) coarsely
    •     crushed
    • 2 c. shredded soy cheese cheddar flavor
    • 2 c. shredded leaf lettuce
    • 2 med tomatoes minced
    • 1/2 c. green onion minced

    Directions

    1. Preheat oven to 375 degrees F. In a large skillet, brown onion in oil over medium heat till soft. Stir in crumbles, kidney beans and enchilada sauce; heat five min. Place one-half of the tortilla chips in the bottom of a 9 x 13-inch pan. Top with half the bean mix. Continue layering with remaining chips and meat mix. Top with 1-1/2 c. cheese.
    2. Cover with foil and bake in a 375 degree F. oven for 20 min or possibly till bubbly warm.
    3. Top with lettuce, tomato, green onions and remaining 1/2 c. cheese.
    4. Makes 8 servings.
    5. NOTES :Here's a play on a popular Mexican casserole. Instead of browned grnd beef, this one uses the frzn soy crumbles. Green Giant is one brand which is readily available.
