  • Taco Casserole

    Ingredients

    • 15 lbs ground beef top round
    • 1/2 cup ground coriander
    • 1 7/8 tsp ground cloves
    • 1 1/4 Tbsp black pepper
    • 2 1/2 Tbsp dried oregano
    • 2 1/2 Tbsp ground cumin
    • 2/3 cups garlic, minced
    • 3 3/4 Tbsp salt
    • 2 1/2 Tbsp crushed red pepper flakes
    • 2 1/2 cups white vinegar
    • 15 qts onions, thinly sliced
    • 2 1/2 Tbsp salt
    • 2 1/2 lb mild green chilis, chopped
    • 5 gals tomato sauce
    • 20 qts refried beans, per recipe
    • 20 lbs cheddar cheese, grated
    • 6 1/4 qts sour cream, thinned

    Directions

    1. Saute onions in a little olive oil. Add green chilis, then add all other ingredients and cook through until beef is well cooked.
    2. Prepare or heat up refried beans.
    3. Lay tortillas (12) in a full food pan. Spoon approxiamtely 8 cups of beef mixture onto tortillas. Drizzle approximately1 cup of sour cream over beef. Sprinkle approximately 1 cup of grated cheese over cream.
    4. Place another layer of tortillas on cheese. Spread beans over this layer, then cream over beans, then cheese over cream. Another layer of tortillas should top the cheese.
    5. Finish with the last layer of cheese. Bake for approximately 35-45 minutes at 350 F. Let rest for at least 15 minutes before serving.
