Szechwan Chicken w/ Cashews

Ingredients

  • 12 lbs raw chicken, cubed
  • 8 lbs red/green peppers, large dice
  • 4 lbs onions, large dice
  • 8 lbs canned mushrooms
  • 2 lbs water chestnuts
  • 1/4 cup ginger powder
  • 1/4 cup garlic powder
  • 1 pint vegetable oil
  • 1/4 cup cayenne
  • 2 lbs cashews, rough chopped
  • 3 cartons Minor's Szechwan Sauce

Directions

  1. Note: This needs to be cooked in batches.
  2. Heat oil. When hot, add chicken, onion, peppers, mushrooms, and water chestnuts.
  3. Cook on high heat in a stir fry style until everything is browned and cooked halfway.
  4. While the chicken mixture is hot and cooking, add the Szechwan sauce and cook until thickened, about 2 minutes.
  5. Pan up and garnish with chopped parsley and cashews.
