    Simple ,easy delicious and so healthy,feel free to use any type of whitefish that you enjoy .Serve this over pasta add a loaf of warm crusty ITALIAN BREAD and fruity white wine...MANJA....

    Ingredients

    • 1 large white onion diced
    • 2 garlic cloves that have been roasted in the oven
    • 1/2 cup diced plum tomatoes
    • 1/2 cup stuffed green olives chopped
    • 2 tbls extra virgin olive oil
    • 4 -6 ounce swordfish steaks
    • 1/2 cup good white wine
    • salt -pepper to taste

    Directions

    1. In a large skillet add oil cook onion till lightly browned add tomatoes and olives,squeeze out the garlic into the skillet add white wine cook about 5 minutes ,salt and pepper the fish add to skillet cover and cook 8 more minutes serve over pasta and warm crusty italian bread and a glass of white wine
