Swissed Beef Steak In Sour Cream Gravy

Ingredients

  • 1 1/4 to 1 1/2 lbs. beef round steak
  • 1/4 c. all-purpose flour
  • 1 tbsp. dry mustard
  • 1 teaspoon salt
  • 1 teaspoon dry thyme leaves
  • 1/4 teaspoon black pepper
  • 1 tbsp. butter
  • 1 tbsp. vegetable oil
  • 1 can (16 ounce.) stewed tomatoes
  • 1 lg. onion, sliced
  • 1/2 c. diced celery
  • 2 lg. carrots, pared, diced
  • 1 tbsp. brown sugar
  • 1/2 c. lowfat sour cream

Directions

  1. Trim fat and bone from meat. Cut into large square pcs; lay on plastic wrap or possibly waxed paper. Mix flour, mustard, salt, thyme and pepper. Sprinkle all of it over meat on both sides. Cover with another sheet of plastic wrap or possibly waxed paper. Lb. meat using mallet till flour is worked into and does not fall off when meat pcs are picked up.
