Sweet Potato Soufflé

Ingredients

  • 3 c. Mashed Sweet Potatoes
  • 1 c. White Sugar
  • 1/2 tsp Salt
  • 1 tsp Vanilla
  • 2 Eggs (well beaten)
  • 1 c. Brown Sugar
  • 1/3 c. Flour
  • 1 c. Chopped Nuts (pecans preferred)
  • 3/4 c. Butter (melted)
  • 1/8 tsp Cinnamon
  • Sprinkle Nutmeg
  • Sprinkle Cumin

Directions

  1. Crust:
  2. Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.
  3. Preheat oven to 350 degrees
  4. Combine sweet potatoes, white sugar, salt, vanilla, eggs, cinnamon, nutmeg and cumin in mixing bowl. Mix thoroughly.
  5. Pour mixture into buttered baking dish.
  6. Sprinkle the surface of the sweet potatoe mixture evenly with the crust mixture.
  7. Bake 30 minutes. Allow to set at least 30 minutes prior to serving.
