Sweet Potato Pineapple Casserole
Ingredients
- 2 can (10-ounce) sweet potatoes, liquid removed
- 1 can (8.25-ounce) crushed pineapple, liquid removed
- 1/8 tsp Nutmeg or possibly cinnamon
- 1/2 tsp Salt
- 2 Tbsp. Brown sugar
- 1/4 c. Butter or possibly margarine, melted
- 1/2 c. Butter or possibly margarine, melted
- 1/3 c. Brown sugar, firmly packed
- 2 c. Cornflakes
Directions
- Mash potatoes in a large bowl till smooth. Add in pineapple, nutmeg or possibly cinnamon, salt, brown sugar and butter. Mix well with a fork. Spread proportionately into a shallow dish. To make topping, mix brown sugar with melted butter.
- Add in cornflakes and stir till cereal is well coated. Sprinkle proportionately over potato mix. Bake at 375 till topping is brown and crisp.
- Yield: 6 to8 servings.
