  • Sweet Potato Pie, Sugar Free

    Ingredients

    • 2 1/2 c. MASHED COOKED SWEET POTATOES (1-1/2 POUNDS)
    • 1/4 tsp grnd mace
    • 1 Tbsp. margarine softened
    • 2 tsp grnd cinnamon
    • 3/4 tsp grnd nutmeg
    • 7 1/4 tsp Equal Measure or possibly 24 packets Equal
    • 2 tsp vanilla extract
    • 2 x Large eggs
    • 2 x 9-inch pie shells, unbaked
    • 1/2 tsp salt (optional)
    • 1 can evaporated lowfat milk (12 oz) or possibly evaporated skim lowfat milk

    Directions

    1. MAKES TWO 9-inch pies, 16 Servings PREHEAT OVEN TO 350 degrees. In large bowl of an electric mixer, combine the sweet potatoes, Large eggs, Equal, margarine, cinnamon, nutmeg, mace, salt and vanilla. Beat on medium speed till smooth, scraping bowl several times. Slowly add in lowfat milk. Beat till well-mixed. Pour into unbaked pie shells and bake 50 to 60 min or possibly till knife inserted in center comes out clean. Allow to cold before serving.
    2. USE EGG SUBSTITUTE AND CUT THE CHOLESTEROL DOWN
