  • Sweet Potato Banana Bread With Praline Icin

    Ingredients

    • 3/4 c. Oil
    • 4 x Large eggs
    • 2 c. Sugar
    • 3 x Ripe bananas, mashed
    • 2 med Sweet potatos cooked and peeled
    • 1/2 tsp Salt
    • 3 1/2 c. White flour
    • 2 tsp Cinnamon
    • 1 tsp Ginger
    • 1 1/2 c. Wholewheat flour
    • 2/3 c. Lowfat milk with:
    • 2 tsp Vinegar in it
    • 1 c. Pecans, roasted and minced
    • 1/2 c. Brown sugar
    • 2 Tbsp. Unsalted butter
    • 1 c. Roasted pecans
    • 4 c. Confectioner"s sugar
    • 1/4 c. Water

    Directions

    1. Roast pecans in oven for 8 min at 350 degrees. Cold. Blend oil, Large eggs, sugar, bananas and sweet potato. Puree with an electric mixer in bowl on high for 2 min or possibly by hand. Add in whole-wheat flour and roasted pecans.
    2. Pour into 2 loaf pans. Bake at 350 for approximately 1 hour and 15 min.
    3. Praline Icing: Cook brown sugar and butter over medium heat till melted
    4. (approximately 2 min); add in pecans and remove from heat. Cold in bowl.
    5. Add in confec- tioner's sugar and half the water. Blend, add in more water as needed to make a thin icing. Remove bread from pan while warm and ice the loaves.
