these are called Gulab Jamuns in India.Gulab meaining rose and jamun is a fruit in oblong shape which is very sweet and is dark purple in color. This sweet is fried and then soaked in warm sugar syrup floavored with roseessence and cardamoms till it is very soft and tender and then is served either warm or cold.It is loved by one and all. This is a staple festival food all over India. This can be made with milk powder, ricotta or/and cottage cheese, bread crumbs with flour and also with a combination of plain flour and milk powder. Here I have made it with a combo of plain flour and milk powder.Try this and you will love it to bits. This sweet is a filling one too....very scrumptious!

    Ingredients

    • For Jamuns:
    • 2 cups plain flour
    • 1.5 cups milk powder
    • 4 tbsp sugar
    • 1 pinch salt
    • 1 tsp baking powder
    • 1/4 tsp baking soda
    • Oil for frying
    • For Sugar Syrup:
    • 2 1/2 cups sugar
    • 2 cups water
    • 2 tsp cardamom powder
    • 1 tsp rose essence(available at all Indian outlets)

    Directions

    1. In a bowl, mix flour, milk powder,4 tbsp sugar, salt, baking powder and baking soda to a nice soft dough.keep it covered with a damp cloth for 10 min.
    2. Meanwhile, prepare syrup by boiling water and sugar, till a syrupy consistency is obtained.Add essence and cardamom powder.Take off heat and let it cool down.
    3. Heat oil till just very hot,but not smoking hot.Make small balls out of the prepared dough and fry till golden.Drain the balls on a kitchen towel. After each batch of fried balls, drop it into the sugar syrup and let it soak up the sweet syrup till it is very soft and tender.
    4. In a bowl, pour a little syrup, put jamun in the syrup and serve either warm or cold as per your preference.Put as much or as little syrup according to your sweet tooth.
