Sweet and Spicy Orange-Glazed Salmon

The salmon steaks contain a savory heat from the Cajun seasoning with undertones of citrus-fresh orange. While the spice rub used here will give the pink flesh a lovely dark colored crust. Serve this with a tossed salad and steamed white rice.

Ingredients

  • 1 Tbsp. Cajun Seasoning
  • 2 Tsp. Dark Brown Sugar
  • 1 Tsp. Smoked Paprika
  • 1/4 Tsp. Salt
  • 6 Boneless, Skinless Salmon Fillets (6 Oz. Each)
  • 2 Tbsp. Vegetable Oil
  • 1/2 Cup Orange Marmalade
  • 2 to 3 Tbsp. Fresh Lime Juice
  • Garnish:
  • 1 Fresh Lime Cut Into Wedges

Directions

Skillet Method:
1. In a small bowl, combine Cajun seasoning, brown sugar, paprika, and salt.
2. Rub mixture over all surfaces of fillets, covering completely.
3. Saute fillets in oil in a large non-stick skillet over medium-high heat for 3 - 4 minutes. Turn and saute an additional 2 - 3 minutes.
4. Blend marmalade and lime juice; swirl in skillet until melted. Carefully turn fish to glaze on all sides. The salmon is done when it begins to flake when tested.
Oven Baked Method:
5. Line a rimmed baking sheet with parchment paper. Set aside. Preheat oven to 325 degrees.
6. In a small bowl, combine Cajun seasoning, brown sugar, paprika, and salt.
7. Rub mixture over all surfaces of fillets, covering completely. Place fillets on prepared baking sheet.
8. In another small bowl, combine marmalade and lime juice. Spoon liberally over fillets, covering completely.
9. Bake for 15 to 20 minutes, or until fish flakes when tested with a fork.
