Sweet and Spicy Chicken
This is a recipe from a Cuban cookbook Three guys from Miami. It is not an authentic recipe because it has red pepper flakes which is not typical of cuban food. This is a delicious dish. It is very flavorful! It is a nice change for the same old chicken recipes. Ingredients
- 3 Tablespoons of olive oil
- 3 Tablespoons of butter
- 2 Cups of chopped onion
- 5 cloves of garlic mashed with1/2 tespoon of salt
- 1.5 lbs of chicken thighs, skinned,deboned, and cut into bite sized pieces
- 1/4 cup brown sugar
- 1 cup ripe mango chunks
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1/8 teaspoon red pepper flakes
- 1/2 cup chopped fresh cilantro
Directions
- Heat the oil in butter over medium heat in a large skillet.Saute the onion until translucent. Add garlic and chicken and continue sauteing, stirring constantly, until the chicken is lightly brown.
- Add the brown sugar, mango, ginger,cumin, and red pepper flakes. Cover and simmer over medium-low heat until the chicken is cooked through, approximately 5-10 minutes. Toss in the cilantro during the last minute or two.
- Serve hot over white rice.
