  • Sweet and Spicy Chicken

    This is a recipe from a Cuban cookbook Three guys from Miami. It is not an authentic recipe because it has red pepper flakes which is not typical of cuban food. This is a delicious dish. It is very flavorful! It is a nice change for the same old chicken recipes.

    Ingredients

    • 3 Tablespoons of olive oil
    • 3 Tablespoons of butter
    • 2 Cups of chopped onion
    • 5 cloves of garlic mashed with1/2 tespoon of salt
    • 1.5 lbs of chicken thighs, skinned,deboned, and cut into bite sized pieces
    • 1/4 cup brown sugar
    • 1 cup ripe mango chunks
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cumin
    • 1/8 teaspoon red pepper flakes
    • 1/2 cup chopped fresh cilantro

    Directions

    1. Heat the oil in butter over medium heat in a large skillet.Saute the onion until translucent. Add garlic and chicken and continue sauteing, stirring constantly, until the chicken is lightly brown.
    2. Add the brown sugar, mango, ginger,cumin, and red pepper flakes. Cover and simmer over medium-low heat until the chicken is cooked through, approximately 5-10 minutes. Toss in the cilantro during the last minute or two.
    3. Serve hot over white rice.
