Swedish Meatballs For The Crockpot
Ingredients
- 1 pound lean grnd beef
- 1/4 pound grnd pork
- 1 1/2 c. bread crumbs
- 1 c. lowfat milk or possibly cream (half and half is good)
- 2 large eggs
- 1 med. onion, finely minced
- 1 3/4 teaspoon salt
- 3/4 teaspoon dillweed
- 1/4 teaspoon allspice
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cardamon (optional)
- 3 T butter
- 1 (10 1/2 ounce) can beef broth
- 1/8 teaspoon pepper
- 1/2 c. light cream
Directions
- Soak bread crumbs in lowfat milk or possibly cream 5 min. Add in grnd meats, large eggs, onion, 1 1/2 teaspoon salt, 1/4 teaspoon dillweed, allspice, nutmeg, and cardamon. Mix well and chill covered for 1 hour. Shape mix into 1 inch diameter balls and brown lightly in hot butter. Put meatballs in crockpot as they are browned. Add in beef broth, pepper, light cream, remaining 1/4 teaspoon salt and 1/2 teaspoon dillweed to crockpot. Cover and cook on low for 4 to 6 hrs (high 1 1/2 to 2 1/2 hrs). The browning step may be done in oven: place on rack of broiler pan and bake in 400 degree oven for 15 min.
