Swedish Apple Pie

"Easy as pie" as the saying goes. But this recipe is really EASIER than pie! Sliced Granny Smith apples go in the pie dish first, followed by a quick and simple topping. The topping settles down around the apples during baking and becomes lightly crisp - so good! Based on The Apple Lover's Cookbook by Amy Traverso.

Ingredients

  • 2 pounds Granny Smith apples (about 4-5 large), peeled, cored and cut in 1/4-inch slices
  • 1 teaspoon ground cinnamon
  • 1 cup plus1 tablespoon flour
  • 1 cup plus 2 tablespoons sugar
  • 10 tablespoons butter (1 1/4 sticks) at room temperature, plus more for greasing pan
  • 1 large egg
  • (Optional topping: vanilla ice cream or whipped cream)

Directions

  1. Preheat oven to 375 degrees F. Butter a 9 or 10-inch pie plate.
  2. In medium bowl mix cinnamon with 1 tablespoon of the flour and 2 tablespoons of the sugar; toss apple slices gently in mixture to coat. Arrange the slices flat and in an even layer in the pie plate (if using a 9-inch pie plate it will look quite full but there will still be room for the topping.)
  3. Using electric mixer, combine the remaining 1 cup flour and 1 cup sugar with butter and egg, mixing until combined.
  4. Using a spatula, spread the batter over apples as evenly as possible.
  5. Bake until top is golden brown and crusty, about 40-45 minutes. (Can also be baked in a 9 x 13 pan for 35-40 minutes.
  6. Let cool on rack about 30 minutes, then serve warm (with optional topping,)
  7. Yield: 8 to 12 servings, depending on portion size.
