    Sunday Supper Chicken Noodle Casserole

    Easy prep casserole that everyone will like. Good way to use up leftover chicken (or turkey).

    Ingredients

    • 8 oz. wide egg noodles, cooked al dente
    • 1 can cream of chicken or celery soup
    • 5 1/3 oz. can of evaporated milk
    • 1/4 tsp. salt
    • 1 cup sharp cheddar or other shredded cheese
    • 3 cups diced chicken
    • 1/2 cup diced celery
    • 2-3 tbs. scallions
    • 1/2 cup frozen peas
    • 1/2 cup toasted slivered almonds
    • 1 tbs. chopped parsley
    • salt and pepper to taste
    • garnish: buttered bread crumbs
    • paprika
    • optional: package sliced, sauteed mushrooms

    Directions

    1. Heat oven to 400 F.
    2. Cook noodles al dente.
    3. Combine noodles with chicken, soup, and the rest of the ingredients.
    4. Top with buttered bread crumbs and paprika.
    5. Bake 25-30 minutes.
