Sunday Supper Chicken Fried Steak and Gravy

- 4 tenderized cube steaks
- 2 cups flour
- 4 tsp. salt
- 1 tsp. pepper
- 1/8 tsp. cayenne
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 beaten egg
- 1 cup buttermilk
- peanut or corn oil
- Gravy:
- 1/2 cup minced onion
- 1/8 tsp. thyme
- 1/2 tsp. garlic powder
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 2 cups milk
- chicken broth
Directions
- Mix flour, salt, pepper, and cayenne together
- Mix the baking powder, baking soda, egg and buttermilk together. Mixture will foam.
- Dredge the steaks in the flour, dip into egg mix, dip in flour again.
- Put a half inch of oil in skillet, and fry the steaks until golden brown on both sides. Drain on paper towels.
- Add the onions and saute until translucent.
- Pour off all but 2 tbs. of the oil, retaining the browned bits, and add 2 tbs. flour, stir.
- Slowly, add milk, stir until thickened, add garlic powder.
- Season with salt and pepper.
- Serve gravy in a gravy boat to pour over the CFS, rice or potatoes. and buttered rolls.
