    Justifiably famous dish found in many truck stops and cafes in Texas. Serve it with potatoes or rice, green beans, rolls and butter, and peach cobbler with ice cream. Oh, and a diet Dr. Pepper to wash it all down with.

    Ingredients

    • 4 tenderized cube steaks
    • 2 cups flour
    • 4 tsp. salt
    • 1 tsp. pepper
    • 1/8 tsp. cayenne
    • 1 tsp. baking powder
    • 1/2 tsp. baking soda
    • 1 beaten egg
    • 1 cup buttermilk
    • peanut or corn oil
    • Gravy:
    • 1/2 cup minced onion
    • 1/8 tsp. thyme
    • 1/2 tsp. garlic powder
    • 3/4 tsp. salt
    • 1/4 tsp. pepper
    • 2 cups milk
    • chicken broth

    Directions

    1. Mix flour, salt, pepper, and cayenne together
    2. Mix the baking powder, baking soda, egg and buttermilk together. Mixture will foam.
    3. Dredge the steaks in the flour, dip into egg mix, dip in flour again.
    4. Put a half inch of oil in skillet, and fry the steaks until golden brown on both sides. Drain on paper towels.
    5. Add the onions and saute until translucent.
    6. Pour off all but 2 tbs. of the oil, retaining the browned bits, and add 2 tbs. flour, stir.
    7. Slowly, add milk, stir until thickened, add garlic powder.
    8. Season with salt and pepper.
    9. Serve gravy in a gravy boat to pour over the CFS, rice or potatoes. and buttered rolls.
