Ingredients

  • 6 x Garlic cloves, peeled, halved
  • 1/2 tsp Salt
  • 12 x Oil-packed sun-dry tomatoes, liquid removed, patted dry, minced
  • 2 c. Nonfat cottage cheese
  • 2/3 c. Plain nonfat yogurt
  • 1/2 c. Low-fat mayonnaise
  •     Assorted fresh vegetables

Directions

  1. Place garlic on cutting board. Sprinkle with 1/2 tsp. salt. Using flat side of knife, crush garlic. Add in sun-dry tomatoes; mince to coarse paste.
  2. Puree cottage cheese in processor. Add in yogurt and mayonnaise and blend well. Add in garlic paste; process to blend. Season with salt. (Can be made 1 day ahead. Chill.)
  3. Serve aioli with vegetables.
