Summer Salsa with Tortilla Chips
The cool, clean flavors of our Summer Salsa with Tortilla Chips make these the perfect snack on a hot day. Ingredients
- 4 vine-ripened tomatoes, chopped
- 1 medium mango, peeled and chopped
- 1 medium ripe avocado, peeled and cubed
- ¾ cup fresh or thawed frozen corn
- ½ cup fresh cilantro, roughly chopped
- ½ cup canned black beans, drained, rinsed and drained again
- ¼ cup chopped red onion
- 1 jalapeno pepper, seeded and chopped
- 3 tbsp. lime juice
- 1 tbsp. olive oil
- 2 garlic cloves, minced
- ¼ tsp. salt
- Tortilla chips
Directions
- In a large bowl, combine all ingredients except tortilla chips. Chill until serving. Serve with tortilla chips.
