Summer Berry Whipped Shortbread
Wonderful light shortbread. I am going to try these using the Lemon Chiffon Dip mix that Epicure sells! Ingredients
- 1 cup butter
- 1 1/2 cup flour
- 1/2 cup icing sugar
- 2-3 Tbsp of Epicure Summer Berry Dip mix (add more or less if you want)
Directions
- Mix well until light and fluffy (I usually put it in the Kitchen Aid for about 10 minutes on medium).
- Drop by spoonfuls on cookie tray.
- Bake 17 minutes at 350 degrees (may take less time).
- This would make a nice Christmas gift - the dip mix along with some pre-made shortbread along with a copy of the recipe!!!
