Sharing a very easy to follow recipe of Red Bell Peppers, Oats & Chocolate balls, A very healthy, unique and tasty snack enriched with antioxidant benefits of red bell peppers, a great source of vitamin C, iron & magnesium loaded with power pack energy booster oats. An easy way to serve peppers specially to the kids ,who are not fond of vegetables.

Ingredients

  • 3 Red Bell peppers
  • 1 Cup Full cream milk
  • 1 Tbs Ghee/clarified butter
  • 1 cup White oats
  • 2 Tbs Cocoa powder
  • 15 Almonds
  • 2 Tbsp honey
  • 1 CupUnsweetened desiccated coconut

Directions

  1. Rinse & grate the peppers and make sure to discard the red skin.
  2. Heat the deep thick bottomed pan and add milk & grated peppers.
  3. On a low flame, bring the whole mixture to a boil and let it simmer.
  4. Grated peppers will cook in the milk and milk will reduce & evaporate after some time .
  5. Now add the ghee & honey and stir well.
  6. Continue to simmer and cook on a low flame.
  7. At the end add crushed almonds and cook for few more minutes
  8. Switch off the burner and keep the mixture aside
  9. In a separate pan, dry roast the oats for 2-3 minutes and keep them aside
  10. Now Mix the bell peppers, oats, cocoa powder all together and make ball shape dumplings.
  11. Coat them in desiccated coconut and keep in fridge for sometime. You can store them in fridge for a week.
